Train fares and tariffs / Would like help on train itinerary for Europe

We are planning a trip (just 2 of us) to central Europe. I have done quite a bit of research on the trains in Germany, Austria and Italy but I'd like to see what suggestions those more experienced than me have.
We are flying into Berlin (TXL) with day trips to Stralsund and Potsdam planned--on to Munich from Berlin (overnight with CNL) with a day trip to Dachau and back--on to Salzburg--then to Venice (overnight train with OEBB)--on to Florence and then on to Rome--flying out of Rome.
Looking forward to reading your suggestions. I did compare a Eurail pass with point to point costs. If I get lucky and order in advance the needed tickets AND get the cheapest tickets, point to point is the way to go. If I mess up and miss out on many of the cheapest tickets, then the Eurail pass just about equals the most expensive point to point costs. So then it just becomes a matter of convenience, to my way of thinking.
